Executive Assistant Pastry Chef

The Assistant Executive Pastry Chef is responsible for managing and directing the daily production of the Peppermill 24 hour Pastry Shop. This includes, but is not limited to, the daily production of high quality baked goods, fine pastry items, ice creams, sorbets, specialty desserts and showpieces.
Six or more years in high volume pastry production, whether Hotel/Casino, Restaurant or Retail Bakery.
Must be familiar with all aspect of pastry to include, but not limited to: specialty bread and rolls, pastries, breakfast pastries, ice creams, sorbets, specialty desserts and showpieces (sugar, pastillage, chocolate, etc.).
Pastry and culinary background must have an emphasis on team building, interpersonal and managerial skills.
Posses ability to teach, train and motivate pastry employees.
Ability to implement strategic visions and plans into day to day operations.
Working knowledge of computers, including Microsoft Word and Excel.
Must be able to successfully complete a background check.
Must have and/or obtain a valid Alcohol Awareness Card and keep it current.
